Robert “Paul” Clayton
Robert “Paul” Clayton was called home on Friday, September 24, 2021, after a brief battle with bile duct cancer.
Paul was born on November 11, 1956, to Joe and Marge (McDonald) Clayton in Brighton, CO.
At an early age, his family moved to Louviers, CO where he grew up active in 4-H and in sports/activities in Douglas County.
After his high school graduation from Douglas County High School, Paul attended Colorado State University in Fort Collins, CO earning his bachelor’s degree in Animal Science and his master’s degree in Beef Production.
Paul worked for Monfort/ConAgra in Greeley, CO for over 17 years, beginning his career as a Quality Assurance supervisor and eventually becoming the VP of Technical Services. While at Monfort he was co-inventor on four United States Patents. It was during this time that Paul met and married Cheryl Lenz on July 30, 1993. They were blessed with two children, a daughter McKayla and son Daniel.
Paul continued his career with US Meat Export Federation in Denver, CO for the next 19 years as VP of Export Services. This career change gave him the opportunity for extensive international travel to USMEF’s international offices as well as many other countries.
For the last two years Paul was the V.P. of Food Safety/Quality Assurance for Seaboard Triumph Foods in Shawnee Mission, KS.
Paul was well-known and respected in the meat industry, serving on numerous committees and board of directors, during his career including the American Meat Science Association, American Marketing Association, American Meat Institute, Colorado Governor’s Task Force on Food Safety, International Stockman’s Education Foundation, International Meat and Poultry HACCP Alliance, National Cattleman’s Beef Association/National Livestock and Meat Board, National Meat Association, National Pork Board, National Western Stock Show International Livestock Forum.
Paul’s passion was educating youth about agriculture and the meat industry. He volunteered countless hours in the Douglas County Colorado 4-H program as the Meat Judging coach, Resource & Project Swine Leader, Douglas County Fair Swine Superintendent and served 18 years on the Douglas County 4-H Foundation. He served on the FFA Agricultural Advisory committee for Douglas County High School as well as serving as their Meat Judging coach. Paul also volunteered time to the Colorado Jr. Angus Association.
Paul was a proud Colorado State Ram fan, affiliate professor/guest lecturer and founding member of the CSU Beef Club which sponsors scholarships for students majoring in agricultural degrees.
Most importantly Paul was a devoted father, husband, brother, and friend.
Paul is survived by his wife, Cheryl, daughter, McKayla, son, Daniel, and sister Dixie Clayton along with many other family members and a plethora of friends.
Cremation has taken place. A private family gathering is planned, and his ashes will be returned to Colorado.
In lieu of flowers, memorial donations may be made to the CSU Beef Club scholarship fund. Contributions should be made payable to and mailed to the CSU Foundation, P.O. Box 1870, Fort Collins, CO 80522. Memo line or accompanying note should reference “Beef Club Scholarship in Memory of Paul Clayton”. This scholarship supports agriculture students with goals to contribute to the success of the livestock industry.
